Why Dalton fresh cream yeasts?

Reliable fermentation
They are composed of strains selected for their excellent oenological qualities. They ensure regular kinetics, minimising the risks of stale fermentations and stuck fermentation.
Elimination of rehydration phase
They are ready to use. They do not require the delicate rehydration phase, and allow the optimisation of inoculum preparation time.
Reduced lag phase
The natural physiological state of the cell ensures a very short lag phase, resulting in a rapid start of fermentation.
Access key to biodiversity
Fresh yeast strains with specific oenological characteristics, which are not suitable for the drying process, are selected and produced. The valorisation of biodiversity is a constant commitment that Dalton concretely implements.
